Recipe Dulce de Leche

Recipe Dulce de Leche<br>Crepes Puerto Rico


2 eggs
1 cup milk, divided
3/4 cup flour
1/2 cup Sour Cream
2 Tbsp. sugar
1/2 tsp. almond extract
2/3 cup (1/2 of 13.4-oz. can)
caramel spread (dulce de leche)
1/3 cup Almonds, toasted
1/2 cup thawed Whipped Topping


Preheat oven to 350F.Place eggs, 1/2 cup of the milk, the flour,sour cream, sugar and extract in blender;cover. Blend until smooth; set aside. Let stand 10 min. Meanwhile, spray 13x9-inch baking dish with cooking spray. Mix caramel spread and remaining 1/2 cup milk; pour1/2 cup of the caramel mixture into prepared dish. Tilt dish to evenly cover bottom with caramel mixture;set aside. Spray 8-inch nonstick crepe pan or saute pan on medium-high heat. Add 1-1/2 Tbsp. batter; tilt pan to evenly cover bottom with batter.Cook crepe 30 sec.on each side. Fold into quarters; place over caramel mixture in baking dish.Continue with remaining batter to make a total of 16 crepes,arranging in four rows in dish with crepes slightly overlapping. Top with remaining caramel mixture; cover with foil. Bake 10 min.Sprinkle with almonds. Cool slightly.Serve topped with the whipped topping.
